Angelia Ong
Ordered carbonara and beef spaghetti for mains and a salad for appetiser. Carbonara, as mentioned by the server, was salty, cheesy and thick as the sauce is made purely of cheese. So for people who is not a cheese lover, you may wish to avoid this dish. However we found that the beef spaghetti actually complimented the carbonara well. By alternating between the two when eating, we found that we won’t be too overwhelmed by the saltiness of carbonara. The noodles itself were a delight to eat! The texture is chewy and not too soft and obviously handmade. We were seated at the Bar which was quite cramp though. Good to see that although we were seated way back in the innermost corner, the servers did not neglect us. They would still popped in from time to time to check on us which we appreciated.
Abilash Menon
Amazing ambience. Tried the Conchiglie handmade pasta. You can really tell that the texture is different due to it being handmade. Simply amazing, the flavour just bursts in your mouth.
Larisse Ng
We ordered 2 pasta – Linguine Ai Fruittu Di Mare, and Pasta Alla Vodka. Both are so good. The waiter gave good recommendations based on our preference! Also ordered non-alcoholic Camomille Berry Cooler, it’s an interesting drink ? I like classic tiramisu too ?

Am amazing and affordable place for lunch. The pasta was top quality, packed with flavour and nuanced control of herbs. The Arriabata had some good heat to it, so the addition of a generous dollop of burata really complemented it well. Thanks so much Tipo!

Super delish pasta! Homemade pasta and service was personally looked into our likings by May. Will definitely come back for a quiet dinner.
Eewei Seah
I haven’t been here since the renovation (ie years ago) and was a lil apprehensive given the much quieter vibe and the waitress who truly refused to let me order the fresh pasta for my saffron sauce because it apparently rly couldn’t go together. But the pasta was as good as I remember. It may not be a take your own bottle of wine out of the fridge type place anymore, but a v solid pick for simple and well done pasta. The anchovy sauce and butter and saffron are my picks 🙂

Great cosy little Italian nook with authentic food. We had the Italian meatball pappadelle and chicken parmesan. The handmade pasta is must try! The food was so good we forgot to take photos. Will be back again. Thank you Faith for the good service!

This is an amazing humble warm and welcoming eatery serving super awesome freshly made pasta. They serve seasonal specials, if it’s ever on the menu you need to have the Laksa pasta. Full of goodness and tasty fresh prawns. Mmmm, so good mains include the vodka pasta – add onsen egg and extra bacon to punch up the decadence and also have the cacao de Pepe. This place doesn’t disappoint apart from when you can’t get a table, so best to try and book. ???

I try to visit Pasta & Co once a month as they have a monthly special dish, alongside their usual menu. Brought different groups of friends there too and everyone loves it. Calamari and the mentaiko pasta are top favourite dishes. I last tried the laksa and December 2022’s monthly special [nudja] pasta. The pasta are all handmade and I love its texture.
Jax Tan
Stumbled upon Pasta & Co and this is my 2nd time here and it’s still a great find! The lady boss was super attentive and made us feel right at home. The place has a cosy, welcoming vibe that’s perfect for a chill meal or date night. We had the Beef Bolognese and Cacio e Pepe, and both were absolutely delicious. The pasta was cooked perfectly and the flavours were spot on. Price were reasonable as the quality of the pasta can match those in higher end restaurants. Will definitely come back to try more flavours.

BestLah’s Recommendation
After discovering Singapore’s finest handmade pasta destinations, the only question left is where to go first. Here are our recommendations to help you make the pick.
1. If You Want The Most Authentic Handmade Pasta Experience
Our pick: Pasta Bar – The Original
Pasta Bar – The Original is the best choice if you’re looking for a true taste of Italy, made with serious craft and tradition. They produce multiple pasta doughs in-house daily using different flours and ratios, which gives every shape its own ideal bite and texture. The seasonal approach also keeps things exciting, with ingredients matched thoughtfully to each pasta type. With an open kitchen, you can watch the artistry behind the meal, and the cosy setting makes it perfect for a relaxed dinner that still feels special. If authenticity is your priority, this is the one to start with.
2. If You Want Customisation And Great Value
Our pick: Tipo Pasta Bar
Tipo Pasta Bar is ideal for diners who want control over their meal without sacrificing quality. You can choose your pasta shape and sauce combination, making it a fun and personalised experience, especially if you’re dining with friends who all want different flavours. For example, one diner might go for mafaldine with Classy Carbonara, while another prefers pappardelle tossed in Royal Ragù. If you’re feeling adventurous, options like black squid-ink pasta with Seafood Sensation or pumpkin-infused pasta with Creamy Crab offer something a little different from the usual classics.
Their flavoured handmade pasta varieties stand out, and the pricing remains accessible for an artisanal pasta bar. With multiple outlets and a lively atmosphere, Tipo Pasta Bar is a reliable go-to when you want something satisfying, flexible, and easy to enjoy any day of the week.
3. If You Want A Cosy, Comforting Meal With Hearty Portions
Our pick: Pastaria Abate
Pastaria Abate is the pick for those who want handmade pasta that feels rustic, generous, and deeply comforting. The restaurant is known for its hearty plates and traditional approach, with pasta made daily using old-school rolling and stretching techniques taught within the Abate family. Diners often gravitate towards classics like Bolognese or Amatriciana, while those craving something richer favour standout dishes such as the oxtail tagliatelle or Italian meatball pappardelle.
Portions are generous and satisfying, making it an excellent choice if you’re dining with family or friends and want a filling meal without unnecessary frills. With its cosy setting, friendly service, and consistently robust flavours, Pastaria Abate delivers that warm “Italian nook” feeling, perfect for a comforting lunch or an unpretentious yet indulgent dinner.
Final Thoughts
Handmade pasta is all about texture, craftsmanship, and that fresh-made depth you can taste in every bite. Whether you’re chasing Italian authenticity, playful customisation, or a cosy hearty meal, these three picks make it easy to start with the right spot—then work your way through the full list.
Frequently Asked Questions (FAQ)
2. What kind of texture should I expect from truly authentic handmade pasta, and how does it relate to the ‘al dente’ bite popular among Singaporean diners?
Authentic handmade pasta should be cooked to a perfect al dente, which translates literally to "to the tooth." This means the pasta should be tender on the outside but offer a subtle, resilient resistance when bitten into. It should never be mushy or soft throughout.
For many Singaporeans, this desired chewiness is often referred to as a "QQ" texture. Fresh pasta, especially when made with a mix of high-protein semolina and eggs, achieves a delightfully chewy and springy mouthfeel that is highly prized locally. This combination of tenderness and resilience ensures that the pasta is a worthy, substantial vehicle for the sauce, offering textural contrast in every mouthful.
3. Why is handmade pasta typically more expensive than regular dried pasta, and does the cost difference justify the value for Singaporean diners?
The higher price point of authentic handmade pasta is directly attributable to the cost of labour, time, and premium ingredients. Making pasta by hand is an intensive, time-consuming process requiring the skill of a dedicated artisan who kneads, rolls, and shapes small batches daily. This craftsmanship is highly valued.
Furthermore, producers often use high-grade imported ingredients like Italian "Tipo 00" flour and fresh, quality eggs, which are more costly than the semolina and water used in dried industrial pasta. For discerning diners in Singapore who prioritise quality, authenticity, and freshness, the markup is justified because they are paying for a superior, artisanal product that offers a depth of flavour, delicate texture, and freshness that mass-produced options simply cannot provide. It is a choice for quality over convenience.
4. When dining out in Singapore, how can I tell if the pasta served is genuinely handmade or merely fresh but commercially mass-produced?
You can look for several key indicators of genuine craftsmanship:
- Irregularity: Truly handmade or small-batch pasta often has minor, pleasing inconsistencies in size and thickness, unlike the machine-perfect uniformity of industrial products.
- Surface Texture: Examine the surface. Authentic fresh pasta should look slightly coarse or dusty, a result of being hand-rolled or cut through bronze dies. This texture is vital as it allows the sauce to cling rather than slide off.
- Colour and Density: Egg-rich fresh pasta will have a vibrant, almost yellow hue. It will also feel noticeably softer and more tender when chewed compared to the dense, harder bite of dried pasta.
- Menu Focus: Restaurants serious about handmade pasta will often highlight the specific regional shapes they create (e.g., pici, agnolotti, orecchiette), which require specialised techniques difficult to achieve commercially.
5. Are there specific sauces or ingredients that pair best with the delicate flavour and texture of fresh handmade pasta?
Because fresh pasta has a delicate, naturally rich flavour (due to the eggs) and a softer texture, it pairs best with lighter, simpler, or cream-based sauces that complement, rather than overpower, the dough.
Ideal pairings include:
- Light Cream or Butter Sauces: Such as a simple butter and sage, or a light carbonara, which coat the silky strands beautifully.
- Delicate Protein Sauces: A fine veal or pork ragù (slow-cooked meat sauce) or a simple seafood sauce (like white wine and clams).
- Simple Tomato Bases: A classic Pomodoro (tomato and basil) allows the taste of the fresh dough to shine through.
Hearty, chunky, or highly acidic sauces (like a heavy Bolognese or complex pesto) are sometimes better suited for firmer, dried pasta shapes which hold up better to the weight and intensity of the sauce.
6. If I buy fresh handmade pasta to cook at home, what are the best ways to store it safely in Singapore's warm and humid climate?
Due to the high moisture and egg content, fresh pasta has a very short shelf life at room temperature and even in the refrigerator.
- Refrigeration (Short-Term): For optimal quality, use the pasta within 1 to 2 days of purchase. Ensure it is well-dusted with semolina or regular flour to prevent the strands or pieces from sticking together, and store it in an airtight container or a paper bag in the coldest part of your fridge.
- Freezing (Long-Term): For storage up to 2 months, freezing is the safest and most effective method in Singapore's humidity. Lay the dusted pasta flat on a baking sheet to freeze for about 30 minutes, then transfer the hardened pieces to a zip-top bag or airtight container. Crucially, always cook fresh pasta directly from frozen; do not thaw it first, as it will clump together.
7. What is the correct cooking time and technique for preparing fresh handmade pasta at home to achieve the perfect result?
The technique for fresh pasta differs significantly from dried pasta, primarily because of the vastly reduced cooking time.
- Boil: Bring a large pot of water to a rolling boil and salt it aggressively until it tastes like the sea.
- Cook Quickly: Add the pasta and stir immediately to prevent sticking. Fresh pasta cooks rapidly, often taking only 1 to 4 minutes depending on its thickness and shape (filled pasta like ravioli might take slightly longer).
- Finish in Sauce (Crucial Step): The best technique is to undercook the pasta by about 30 seconds, then transfer it directly into your warmed sauce along with a ladleful of the salty starchy pasta water. Toss and simmer for the final minute. This step allows the pasta to finish cooking while absorbing the sauce and creating a perfect emulsion that binds the dish together.
8. What role does the type of flour play in handmade pasta, and what are the common flours used by artisans in Singapore?
The choice of flour is critical as it determines the final texture and density. Artisans typically use two main types, often in combination:
- "Tipo 00" Flour: A finely milled Italian soft wheat flour that is low in protein. It results in a very delicate, silky, and tender pasta, often preferred for delicate long strands like tagliatelle.
- Durum Wheat Semolina: This is a coarser, higher-protein flour that yields a chewier, firmer pasta. It provides the "bite" or "QQ" texture that is highly sought after and is essential for some extruded shapes.
Many pasta makers in Singapore strategically blend these flours with fresh eggs to balance the dough—achieving the richness and tenderness of egg pasta while ensuring enough structure for the texture to hold up perfectly when cooked al dente.
9. Beyond the common shapes like fettuccine and spaghetti, what regional Italian pasta types are growing in popularity in the Singapore food scene?
As Singaporean diners become more sophisticated and demand authenticity, pasta makers are introducing less-common, regionally specific shapes that showcase the depth of Italian tradition and the artisan's skill:
- Pici: A thick, hand-rolled spaghetti from Tuscany, known for its rustic texture and heft, which pairs wonderfully with rich game sauces or simple cacio e pepe.
- Orecchiette: Meaning "little ears" from Puglia, these concave discs are perfect for scooping up hearty, chunky sauces or vegetables.
- Tortelli/Agnolotti: These are filled pastas, often shaped by hand into pillows or half-moons. Their growing popularity reflects an interest in complex, multi-layered dishes where the dough, the filling (such as rich braised meat or creamy ricotta), and the sauce all contribute equally to the flavour.
10. Can fresh handmade pasta be adapted for various dietary needs or creatively flavoured with unique ingredients popular in Singapore?
Absolutely. While traditional Italian pasta uses wheat and eggs, the modern Singaporean culinary scene embraces adaptation for dietary preferences and fusion flavours:
- Dietary Needs: It is becoming increasingly common to find pasta makers offering gluten-free options made from alternative flours like chickpea, lentil, rice, or corn flour. These alternatives provide a similar structure and allow those with sensitivities to enjoy the fresh pasta experience.
- Flavour Infusion: Artisans frequently infuse the dough itself with natural colour and flavour. Popular infusions include squid ink (for a black, savoury pasta that complements seafood), beetroot (for a vibrant red hue and subtle earthy sweetness), and spinach (for a classic green colour and herbaceous note). This commitment to creativity allows pasta to be customised to complement unique sauces or cater to local palate preferences.
